  3. Add Eggs & Vanilla: Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as needed. Beat in the vanilla extract.
  4. Combine Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Mix Wet & Dry: With the mixer on low speed, gradually add the dry ingredient mixture to the wet ingredients. Mix until just combined—do not overmix.
  6. Add Chocolate: Gently fold in the chocolate chips with a spatula.
  7. Chill Dough (Crucial Step): Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes (or up to 3 days). Chilling prevents the cookies from spreading too much and results in a chewier, more flavorful cookie.
